Mother’s Day desserts: what a wonderful excuse to dig into some lovely sweets with yer ma. Or yer ma in law, or any of the moms in your life.
I always make my mom something sweet, and of course I get to enjoy it too! And I don’t want to make her just any old sugary sweet, because she wouldn’t want that. If you think I’m fierce about healthy eating, you should meet my mom. She makes me look like Paula Deen. Not quite, but almost.
Even if your mom isn’t as hardcore as you (or my mom) are on healthy eating, it’s nice to share something with her that’ll help her feel good. And we know how delicious healthy desserts can be, but maybe she doesn’t…yet! As I was cruising around looking for healthy Mother’s Day dessert ideas I found so many that I’d love to make, so I thought I’d share them with you. They’re too beautiful to keep to myself, and I bet there’s something here your mom will love! They’re all vegan, and all but one is gluten free (but could be easily adapted).
Dates, pecans and pure dark chocolate come together to make a version of the classic candy that’s nutritionally cool and delicious! How pretty will these be stacked up on a plate, nice cups of coffee to go with? I’m still having a hard time convincing my mom that dark chocolate’s good for you, so I’m gonna make these for myself one of these days. And she can sample one or two. 🙂
How gorgeous is that ice cream? If that’s not a classic Mother’s Day dessert, then I don’t know what’s what. It’s rich and creamy in a totally healthy way, and I can just imagine that sweet, summery mango flavor. I know what you might be thinking – ok, but I don’t have an ice cream maker – and if you’re thinking that, good news: Maria shares an awesome method for making ice cream using a muffin tin and a food processor!
Even if you do nothing else all day today, check out this key lime pie recipe. It’s brilliant! Lucie uses dates and coconut to make these crust (I’ve done similar crusting, and it’s dee-lish!) and rich, creamy avocado to make the luscious key lime filling. I don’t think any mom could resist a slice of this!
Dawn says these are for kids, but I think they’d be an awesome Mother’s Day dessert, too. Anyone who loves mint and chocolate is going to crave these up and down. Think thin mints, only thick, creamy and made from good-for-you stuff.
To me, lemon bars are kinda like the Holy Grail of Mother’s Day desserts, and Marly’s version is vegan and sounds absolutely scrumptious: sweet, moist and super lemony!! They’re ridiculously better for you than traditional lemon bars, and they’re made with my favorite healthy dessert tweak: tofu! Tofu just makes some awesome creamy desserts, and if you haven’t tried it what are you waiting for? Go get you some tofu!
