Set it, forget it, do your thing and come back to find a pot of delicious grub waiting for you – that’s the magic of slow cookin’. Here are some five slow cooker vegan recipes I’m dying to try. They’re all healthy, gluten free and look absolutely scrumptious!!
Hearty black beans, spicy jalapenos, garlic, onion, chili and chipotle powder…yes please!! What could be better than coming home to a slow cooker full of this Tex-Mex deliciousness? Sarah suggests a little avocado and fresh cilantro to finish, and that sounds HEAVENLY.
I’m imagining waking up to the scent of cinnamon, nutmeg and apples simmering away in a pot of hot, filling steel cut oats, and suddenly waking up sounds like a pretty great plan. This apple pie oatmeal sounds incredible, and topped with pecans, raisins, a little maple syrup…wowza! This is a slow cooker vegan recipe I could eat all day.
You know I love my Indian/Indian-esque dishes, and vegetable korma’s one of my favorites. This version is vegan and loaded with veggies and spices in a thick coconut milk sauce. Just throw everything into the slow cooker and when you come back – veggie korma heaven!
Props. The maddest of mad props. I can’t even describe this awesomeness. Just head over to The Pig and Quill and check out that amazing ingredient list; this may be the tastiest chili ever made, and it features wonderful things like ancho chiles, mushroom stock, dark chocolate and tofu, slow cookered (cookered?) to what I can only imagine is rich, spicy perfection.
Pumpkin, coconut milk, Indian spices, blended in a thick, creamy soup…healthy, elegant vegan slow cooker simplicity. I want to eat it out of that gorgeous bowl, but since I don’t have that bowl I’ll just pull up this pic and look at it while I nosh.
