You can buy flavored tortellini, which comes in an array of appetizing colors, stick to the traditional variety, or use a combination of the two.
This is an excellent salad to bring to family gatherings, potlucks, or to serve anytime you want to serve a healthy dish which will impress, but doesn’t take a lot of time to prepare.
This salad can be made with any type of oil, but for the best taste and maximum nutritional value, olive oil is the best choice. It costs a little more, but you’ll taste the difference. Olive oil is known for it’s heart health benefits, so you can feel good about using it liberally.
Bold And Savory Tortellini Salad
1/2 cup oil, preferably olive oil
1/3 cup balsamic vinegar
1 teaspoon salt
dash black pepper
3 dashes hot pepper sauce
2 cloves garlic, minced fine
1 7 oz. package tortellini
1 15.5 oz can dark red kidney beans, drained and rinsed
1/2 cup fresh parsley, chopped
1/2 large onion, any color, sliced thin
1 tablespoon dried oregano
1 large tomato, chopped
1 small green pepper, chopped
Combine all the dressing ingredients in a jar with a lid, and shake well. Cook the tortellini according to the package directions and rinse in cold water. In a large bowl, combine the tortellini with all the other salad ingredients and pour the dressing over; toss gently to coat. Cover the salad and refrigerate several hours to chill.
