Easy Italian Summer Salad
Bring bistro flavor to everyday salad fixings with this Easy Italian Summer Salad. It’s healthy, light and refreshing, perfect for spring and summer dining, and you can literally toss it together in a few minutes. It’s hearty enough to eat as a meal, or you can serve it alongside your favorite Italian dish. Best of all, you can easily customize it to be your own unique creation – add what you like, and leave out what you don’t!

Easy Italian Summer Salad
makes 8 – 10 servings

1/2 head Iceberg lettuce, torn into bite-size pieces
4 cups baby spinach
1 package Dole® European Blend (a mix of Iceberg lettuce, Romaine lettuce, leaf Lettuces, radicchio and endive)
1 carrot, grated
1/2 yellow onion, sliced
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 orange bell pepper, sliced
2 Roma tomatoes, sliced
2 1/2 cups cooked tri-color spiral pasta

1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
a few shakes balsamic vinegar (about 1/2 – 1 teaspoon)
2 tablespoons parmesan-romano cheese blend
2 tablespoons real bacon bits (optional)
1 tablespoon Italian seasoning blend
1 tablespoon garlic powder or granules
1 tablespoon Mrs. Dash® Tomato Basil Garlic Seasoning Blend
1 teaspoon Mrs. Dash® Onion and Herb Seasoning Blend
1/2 – 1 teaspoon crushed red pepper flakes

Easy Italian Summer Salad1. Combine all the salad ingredients in a large mixing bowl and gently toss them together.

2. Add the dressing ingredients directly to the salad – no need to mix them separately. Continue to toss gently for several minutes, or until everything looks well combined.

That’s it! Easy, light deliciousness. Here are some add-ins you might like to try:

  • a tart apple, sliced
  • pepperoncini peppers
  • good-quality olives
  • grapes
  • 1/4 cup shredded low-fat mozzarella
  • a few handfuls fresh parsley, torn
  • cherry tomatoes
  • sliced mushrooms
  • broccoli florets
  • sliced cucumber
  • turkey pepperoni, or Tofurky® pepperoni for vegetarians
