Make delicious, healthy pineapple ice cream with just a frozen pineapple, a little maple syrup and a dash of salt! It’s true. If you freeze pineapple chunks and blend them with a few tablespoons of maple syrup and a dash of salt, you’ll come up with an amazingly sweet, creamy, scoopable ice cream that’s just like ice cream. Vegan, clean and gluten free.
I know I’ve been saying this alot with my recent frozen fruit experiments, but seriously: where has this been all my life? This is what I should have learned in home ec instead of how to sew a drawstring bag. Not that drawstring bags aren’t awesome, but this is awesomer. There’s something about making my own creamy, scoopable ice cream at home that makes me feel like a kitchen goddess. And in this case, all I needed to make it was a frozen pineapple. I added a little maple syrup and literally a dash of salt for flavor, but it’s really all about the pineapple.
You know that phrase about fruit being nature’s candy? I’m discovering that it’s also nature’s ice cream. How wow is this?? Those sweet, creamy, delicious scoops of ice cream there…are a pineapple. Fruit. Vitamin C rich, high fiber, fat free, all-natural fruit.
As long as you have a freezer and a decent blender or food processor, you can make this. Amaze! The natural sweetness and mega vitamin C this packs gave me such a boost! I mentioned in my last post things have been hectic for me lately…they’re hectic because I’ve been deconstructing and packing the entire contents of a house. My grandmother recently passed away, and my mom and I are dealing with all her stuff…and she had a lot of stuff! I swear, the woman never threw anything away in 92 years.
So I’ve been getting a great workout lately, which is awesome. But the workout goes on and on. And on. Wait a minute, I have to go have a primal scream in the yard. I’ll be right back.
Ok, I’m back. So I’ve been having some bouts of feeling run down, during this aerobic weight lifting session that seems to go on and on. But the other day, when I was digging into this pineapple ice cream? Totally revved my @ss up. I felt recharged and refreshed and it was so sweet and delicious…exactly the treat I needed, on a physical and emotional level.
Clearly…I need to buy another pineapple. ASAP.
Hey, thanks for listening to me. This little deal with my gram’s stuff won’t go on forever. But pineapple ice cream is eternal.

This fresh, sweet, creamy pineapple ice cream is an easy-to-make, healthy treat!

- 1 pineapple, cleaned and cut into smallish chunks (about 5 cups)
- 2 Tbs pure maple syrup (agave would work too)
- dash salt
- Arrange the pineapple chunks in a single layer in a large freezer bag or covered plastic container. Let freeze for 1-2 hours, or until firm but not rock hard.
- Combine the pineapple chunks, syrup and a dash of salt in a good food processor or powerful blender. Process until smooth and creamy. Taste and adjust the sweetness or seasoning if needed.
- Enjoy soft, or transfer to the freezer for 30 minutes to 1 hour to let it firm up enough to scoop.
