This healthy lime cilantro dressing has a great balance of fresh, bright flavors. I want it on all my summer salads! I originally made this lime cilantro dressing to go with a quinoa black bean salad. And now I’m so in love with it I’m giving it a post of its own.
Lime and cilantro are an amazing combo under any circumstances, but whipped together in a healthy, fresh salad dressing with a little garlic and spice…wow! Pour that on everything. The occasional flecks of red are a little dose of hot pepper flakes. Just enough heat to keep the flavors feisty.
It’s an ideal summer dressing: all about simple ingredients and fresh, bright flavor. It’s totally magic on my black bean quinoa salad, but I want to try it on green salads, maybe a tomato and onion salad, a cold rice salad…it would even be amazing on a gluten free pasta salad.
I’m planning on having Graeme’s parents over later this summer for a little outdoor dinner party…this dressing. I’m going to have to have it on something. It’s got the kind of fabulousness I want to treat people to. I think they’ll love it, and it tastes as deep and green and bright and fresh as summer itself. It’ll be perfect.
Ok, I can’t think of any salad this dressing wouldn’t be great with. Maybe fruit, and I still think it would work. That might be a little avant garde for Graeme’s parents though…
The recipe makes just under a cup, which was enough to generously dress about 4 cups of quinoa, black beans, tomatoes and other nibbles. That should be enough for 4-5 cups of pasta salad, too. Quinoa, beans, pasta…starchy stuff like that tends to absorb dressings a little. I think it’ll be more than enough for 8-10 cups of a leafy green salad.

- about 1 cup fresh cilantro leaves (some stems are fine too)
- 3-4 cloves garlic (use 4 if they're small)
- about 1/4" slice fresh ginger root, peeled
- 2 Tbs maple syrup
- 2 tsp balsamic vinegar
- 1/4 tsp salt
- zest of 1 lime
- juice of 2 limes
- 1/4 tsp crushed red pepper flakes
- 1/2 cup olive oil
- Combine all the ingredients except the olive oil in a food processor or powerful blender and puree. Slowly drizzle in the olive oil while the machine's on, or add it a little at a time. Taste and adjust the seasoning to your liking.
