The fresh, zesty taste of citrus meets light, fluffy cheesecake goodness in this easy-to-make dessert showstopper. Our Low Sugar Orange Dream Cheesecake makes the perfect finale for any spring feast, and is sure to garner compliments galore. To make it look extra fancy, top it with a few thin slices of fresh orange twisted as shown. If you really want to pull out the stops, tuck a few mint leaves beneath the orange twists. This makes for polished, pretty dessert you’ll be extra-proud to serve!
For this recipe you’ll need a 9″ springform pan.
Low Sugar Orange Dream Cheesecake
2 cups graham cracker crumbs, or other low-sugar cookie crumbs
8 tablespoons reduced-calorie margarine, melted
3 packets Equal sweetener
1 cup low sugar orange juice
1 envelope unflavored gelatin
1 and 1/2 8 oz. packages fat free cream cheese, softened
1 cup part skim ricotta cheese
12 packets Equal sweetener
2 cups light whipped topping
2 medium oranges, peeled, seeded and chopped
Preheat the oven to 350 degrees. Spray the springform pan with nonstick coating. Mix all the crust ingredients together and pat the mixture evenly on the bottom and halfway up the pan. Bake for 8-10 minutes, and then let the pan cool while you prepare the filling.
Pour the orange juice into a small saucepan, and sprinkle the gelatin over the juice. Let the gelatin and juice stand together for about a minute to let the gelatin soften. Turn the heat on to medium low and stir the mixture constantly for about three minutes, or until the gelatin dissolves. Remove from heat and set aside.
In a large bowl, blend the cream cheese and ricotta in a large bowl until they’re smooth. Stir in the remaining Equal, then the orange juice mixture. Finally, fold in the whipped topping and the chopped oranges. Spread evenly into the prepared crust and chill for at least six hours, or preferably overnight. Remove the sides of the springform when you’re ready to serve.
