If you want to make some really great whole grain bread but aren’t into the whole time and effort thing, this recipe is a keeper. It’s quick and easy to make, and when you’re done you have a gorgeous loaf of bread to enjoy. It looks crusty and robust and inviting, it makes your kitchen smell like a bakery, and it’s got a dense, hearty texture that’s perfect to serve with winter favorites like soups and stews and chilis. I made a few loaves this week to fine tune the recipe, and they came out awesome every time. I even froze one to gift, this bread is so awesome.
This bread is great to serve with meals, but my favorite way to enjoy it so far is as a snack. I busted out a jar of spicy plum chutney and spread it on thick slices. Yum!!
Whole Wheat Garlic and Herb Quick Bread
makes one 8″ x 4″ loaf, about 10 thick slices
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
3 Tbs sugar
1 Tbs baking powder
1/4 tsp salt
Seasonings I used:
1 Tbs Mrs. Dash, Onion and Herb variety (use whatever salt-free herb blend you like)
1 tsp garlic powder
1 tsp onion powder
1/2 tsp Italian seasoning or oregano
about 1/8 tsp smoked paprika
dash red pepper flakes
1 cup fat free evaporated milk
1/3 cup olive oil
extra olive oil and spices for topping
1. Heat the oven to 350° and coat the inside of an 8″ x 4″ loaf pan with nonstick spray. Combine the dry ingredients and seasonings in a large bowl and whisk them together. Combine the milk, oil and egg in a small bowl and whisk them together. Stir the milk mixture into the dry ingredients until just combined. If the dough seems dry (mine did), no worries. Keep calm and bake on.
2. Press the dough into the pan and score the top a little with a knife; I cut a shallow slit down the middle of the loaf in the pics, and some really nice horizontal ones in another. Brush the top with olive oil. Bake for about an hour. About 15 minutes before the bread’s done, take it out of the oven, brush the top with a little more olive oil, and give it a generous sprinkling of seasonings. I doused on more Mrs. Dash and a few red pepper flakes. Let the bread cool completely before slicing.
