Love lollies, but hate derailing your diet plan with a big blast of refined sugar? No problem – make your own sugar free lollipops at home.
Making hard candy without sugar requires some special ingredients – you’ll need either Erythritol or Malitol. But aside from that, the process is about the same as making standard hard candy. You need to use oil candy flavoring (simple extracts meant for baking won’t do the job) and you must bring your ingredients to the hard crack stage (300 degrees) so that means caution is crucial! Even a tiny splash of liquid at that temperature could result in a painful burn.
NOTE: To make these, you need a candy thermometer, candy molds, and paper lollipop sticks (available at online or at specialty baking shops, craft stores, and even in some grocery stores)
No Sugar Lollipops – Version I
– 1/2 cup of water
– 1/4 teaspoon candy flavoring oil (note: use candy flavoring oil, not a flavor extract for baking!)
– Liquid food coloring
– 1-1/2 cup Erythritol
Prepare the candy molds by spraying the inside with non-stick spray, then lay the lollipop sticks in place (many candy molds have a depression to accommodate the stick).
Combine the Erythritol and water in a medium sized, heavy-bottomed saucepan. Set the heat at medium-high and cook till mixture comes to a boil. Insert candy thermometer (be sure the tip isn’t touching the bottom of the pan) and continue to cook until mixture reaches 300 degrees (hard crack stage).
Remove from heat and let stand until the mixture stops bubbline, then stir in flavoring oil and food coloring as desired. Pour hot candy mixture into prepared molds.
No Sugar Lollipops – Verson II
1-1/2 cups Maltitol Syrup (NOTE: you can also use DiVinci Sugar Free Vanilla Syrup)
1 cup granulated Maltitol
1/2 teaspoon candy flavoring Oil
Candy Food Coloring
Prepare the candy molds by coating inside with non-flavored vegetable oil spray and lay sticks in place. Combine the syrup and Maltitol in a medium sized sauce pan and cook over medium high heat until it begins to boil, then insert candy thermometer (make sure it doesn’t touch the bottom of the pan). Continue cooking at a rapid boil until mixture reaches 300 degrees. Remove from heat and let cool till thr boiling subsides, then stir in food coloring and flavoring oil. Pour the mixture into the prepared molds and cool in a dry place.
