This is one of my favorite recipes because it’s so simple, so healthy and so delicious. Grapefruit and orange combine to make a sweet, tangy citrus salad that tastes right any time of the day. I like to keep a container of this on hand so I can reach for it any time I feel like having a little vitamin C pick me up. Each 100 calorie cup provides 182% of daily vitamin C requirements! It’s also a great source of fiber and vitamin A.
3 medium-large grapefruits, any variety
2 medium oranges
Stevia In The Raw® to taste (optional)
1. Peel the fruit and pull it apart into segments. Cut the segments into bite-size pieces and combine them in an air-tight container, stirring well to make sure their juices mingle.
2. If you like your fruit a little sweeter, stir in about a tablespoon of sweetener. This will keep in the fridge for at least a week, and will taste even better after a day or two.
This is a great treat to have on hand for those times when you need a fruit fix but want to skip the time and mess of peeling. You can use it as a base and add other fruits to it, or even mix a bit of it into a fresh vinaigrette salad to give it a juicy, tangy kick.
