In other words, this quinoa is an instant self-esteem booster. It’s also got lots of protein and fiber which makes my body very happy, and it’s cheap and easy to make. An essential quinoa recipe if ever there was one!
This is a really great quinoa recipe to have up your sleeve because it’s so versatile. It’s basically quinoa, black beans and tomatoes flavored with the super-fresh duo, lime and cilantro. You can eat it on it’s own, which I usually do, or you can also stir in chunks of tofu, chik’n, etc. The abundance of black beans makes it super filling so you don’t need extras to make it hearty, but sometimes extras are just nice. It’s great hot or cold, although I slightly prefer cold because it makes the cilantro and lime taste even fresher. And although I haven’t tried it this way yet, I know it would make a really snazzy, fun side dish.

- 1 c uncooked quinoa
- 1 1/2 c black beans
- 4 green onions, chopped
- 3 Roma tomatoes, chopped
- about 1/3 c torn cilantro leaves
- zest and juice of 2 limes
- 1 Tbs olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- Cook the quinoa according to package directions. Stir the dressing ingredients together.
- In a large bowl, toss everything together with the dressing. Add more seasoning to taste.
